We find food is the easiest way to create community. A traditional Healthy Luxe weekend involves Pancake Sunday and our new favourite is this delicious Savoury Green Tomato Pesto Pancakes recipe.

Invite a few friends over and flip away! This recipe is perfect for when you are not in the mood for something sweet, but instead are craving a fun, savoury breakfast, lunch or even dinner option. These light, fluffy and flavoursome pancakes are sure to be a hit with everyone. Super easy and super healthy… What more could you really want?

Oh, and did we mention they cater to all our vegetarian/gluten free friends too?

These pancakes are made easy by the super delicious Mutti Pomodoro Green Tomato Pesto Style Stir Through Sauce. Mutti Pesto can be used simply in pasta and so much more! These delicious healthy pancakes are just one example of how we use this pesto, which we recommend you top with a dollop of labneh and fresh herbs for the ultimate taste sensation.

Mutti’s Pesto Style Stir Through Sauces are packed with authentic, quality ingredients including 50% perfectly ripe Mutti tomatoes. This is why it tastes so fresh and why it’s become a Healthy Luxe staple.


  • 2 eggs, whisked

  • 1/2 cup oat milk

  • 1/4 cup Mutti Pesto Style Sir Through Sauce Green Tomato

  • 1/2 cup buckwheat flour

  • 1 tsp olive oil, to cook

  • Labneh, salad greens, herbs and/or fresh tomatoes, to serve


  • Combine eggs, oat milk and Mutti Pesto Style Sauce in a medium sized mixing bowl, mix well. Gradually add buckwheat flour and mix until well combined.
  • Heat olive oil in a non-stick pan for approx. 1 minute.
  • Place a small amount of batter onto hot pan (according to desired pancake size)
  • Cook for approximately 1 minute, or until bubbles start to form, flip and cook for a further 30 seconds- 1 minute.
  • Serve with fresh salad and leaves, labneh,the extra Mutti Pesto Style Sauce and crispy leeks, sprouts and/ or fresh herbs
