1 tsp sea salt
3/4 cup fresh herbs (mix of basil, coriander, parsley, mint and dill)
1/2 cup olive oil
Note: we like to keep the herb oil in a jar and add extra olive oil before serving.
Directions
- Add fresh herbs to a pot of boiling, salted water for 15-20 seconds.
- Drain and transfer to a bowl with ice cold water, allow to cool completely.
- Pat herbs dry to remove excess moisture.
- Transfer to a blender with olive oil. Pulse until desired texture is reached.
- Serve with fresh sourdough or as a salad dressing.
- Store in an air-tight jar. Keeps in the fridge for about a week.
