Ingredients

  • 1 tsp sea salt

  • 3/4 cup fresh herbs (mix of basil, coriander, parsley, mint and dill)

  • 1/2 cup olive oil

Note: we like to keep the herb oil in a jar and add extra olive oil before serving.

Directions

  • Add fresh herbs to a pot of boiling, salted water for 15-20 seconds.
  • Drain and transfer to a bowl with ice cold water, allow to cool completely.
  • Pat herbs dry to remove excess moisture.
  • Transfer to a blender with olive oil. Pulse until desired texture is reached.
  • Serve with fresh sourdough or as a salad dressing.
  • Store in an air-tight jar. Keeps in the fridge for about a week.
