The most refreshing cheesecake that satisfies the cravings but doesn’t leave you with that full and bloaty feeling! This Acai Cheesecake is so delicious but believe it or not, healthy enough to enjoy for breakfast, lunch or dessert! A special treat not to feel guilty about! This vegan cake is an easy one to whip up for all your family and friends too… if you feel like sharing that is!
The addition of high antioxidant, nutrient packed açai creates a healthy and delicious twist to the indulgence that comes with the festivities of the season. We are huge fans of açai, consuming almost daily in smoothie bowls but this is the first time we have experimented with using frozen açai in a dessert…. We are so thrilled with the result!
The top layer being the hero ingredient is Amazonia Acai Pure. Yes, Acai can be used for much more than just smoothies and acai bowls! Amazonia’s Acai Pure is loaded with antioxidants: 7 x more than blueberries, in fact! It also naturally contains Omega-3, 6 & 9 essential fatty acids, which are essential for healthy skin, hair and nails.
To get that delicious, creamy cheesecake texture we always use a combination of coconut cream (or coconut yoghurt) and soaked macadamias (or cashews).

Ingredients
- Base
1/4 cup hazelnuts1 tbsp cacao powder
1/4 cup buckinis
1/4 cup desiccated coconut
5 medjool dates
- Vanilla layer
1 cup macadamias (soaked for 3 hours)1/2 cup vanilla coconut yogurt (or coconut cream)
1 tsp vanilla essence
1 tbsp maple syrup
- Açai Berry Layer
1 cup macadamias (soaked for 3 hours)1/2 cup coconut cream
1 tbsp coconut oil
1 tbsp maple syrup
Directions
- Combine all ingredients for the base in a high power blender and blend until smooth.
- Press into the base of a greased and lined spring form cake tin and set aside while you make the vanilla layer.
- Drain and rinse soaked macadamias and place in blender with all remaining ingredients, blend until smooth and creamy.
- Spoon on top of the base and place in the freezer for an hour or so.
- Once the vanilla layer is firm, prepare the açai layer. Combine all ingredients in a high speed blender, blend until smooth.
- Pour on top of the vanilla layer and return to freezer for 4-5 hours or overnight to set.
- Decorate with grated chocolate, fresh berries and/or coconut yoghurt, serve and enjoy.
