There’s nothing quite like a nourishing bowl of oats to warm you up on a cool morning. Often we find oats to be a bit lacking in flavour but we can assure you these ones are not! The addition of berry coulis adds natural sweetness which is perfectly paired with the creaminess of peanut butter.

  • 1 cup frozen raspberries or blueberries

  • 1/2 cup orange juice (or lemon juice)

  • 1 tbsp maple syrup

  • 1/4 tsp vanilla essence

  • 1 cup gluten free oats

  • 1 cup coconut milk

  • 1 cup coconut water

  • 1 tbsp mesquite powder (optional)

  • 1-2 tbsp smooth peanut butter (+ extra to serve)

  • 2 tsp maple syrup or raw honey (optional)

  • 1 tsp cinnamon

  1. Firstly, prepare coulis. Combine all ingredients in a saucepan and place over medium heat. Leave to simmer for approx. 5 minutes, stirring occasionally. Set aside and allow to cool.

  2. Combine all ingredients for the oats in a saucepan and bring to a boil before reducing heat to simmer for approx. 5 minutes.

  3. Transfer to Coconut Bowls and top with your raspberry and/or blueberry coulis, fresh berries, shredded coconut, peanut butter and/or maple syrup.
