This nutrient packed creamy chia bowl is ideal for a quick and easy breakfast or snack. Chia puddings are best made the night ahead as this allows the chia seeds time to swell. Such a satisfying start to the day that will keep you feeling nourished and energised for hours.

1/2 cup chia seeds
1 cup coconut water
1 1/2 cups frozen blueberries
3/4 cup cashews
3/4 cup coconut yoghurt
1/2 cup orange juice (or lemon juice)
1 tbsp freeze dried acai powder (optional)
4 medjool dates
1 tbsp coconut oil
1/2 tsp vanilla bean powder

Firstly, combine chia seeds and coconut water in a large mixing bowl and gently stir. Set aside for 15-20 minutes to allow chia seeds to swell.
Combine remaining ingredients in a high-power blender, blend until smooth and creamy.
Add blueberry blend to the chia mix and stir. Distribute evenly between bowls or jars and transfer to the fridge for 4-5 hours or overnight.
Serve as is or top with additional coconut yoghurt, coconut flakes, peanut butter and/or fresh berries.
