The Gluten Dilemma

Gluten, the protein found in grains like wheat, barley, and rye, is almost ubiquitous in the Western diet. While gluten-free products have become widely available, many are highly processed and packed with sugars and preservatives, making them less healthy options.

For those with auto-immune Coeliac Disease (CD), gluten consumption can lead to severe health issues, due to the gluten itself destroying the microscopic villi within the intestines, which are essential for adequate nutrient absorption. Symptoms can range from acute gastrointestinal distress to long-term health consequences. It's crucial for CD sufferers to avoid all gluten sources, including potentially contaminated grains like oats.

Beyond CD, many people are opting to reduce gluten due to its potential effects on digestive health. Research suggests that gluten can increase the permeability of the gut mucosa, known as “leaky gut,” which may increase the risk of autoimmune disorders, certain cancers and neurodegenerative diseases.

The dramatic rise in sensitivity to gluten-containing products may be attributed to the equally dramatic change in farming practices. Commercially grown grains are often modified to contain higher levels of gluten, are sprayed with the herbicide glyphosate, genetically modified to be resistant to glyphosate, and then the harvested grain is highly processed.


For those questioning gluten’s role in their health, consider these guidelines:


  • Get Tested: If you suspect CD or gluten sensitivity, ask your doctor for a blood test to check for antibodies to gliadin. Note: CD requires endoscopy for definitive diagnosis.

  • Limit Gluten Intake: Don’t consume gluten at every meal.

  • Choose Organic: This means you will be avoiding glyphosate component.

  • Track Symptoms: Keep a food and symptom diary to identify patterns related to gluten consumption.

  • Try a Gluten-Free Trial: Abstain from gluten for a month and monitor any changes in your symptoms and energy levels.

  • Choose Wisely: Avoid highly processed gluten products. Opt for traditionally prepared sourdough, which can aid digestion.

  • Support Gut Health: Include prebiotic and probiotic foods in your diet.

  • Focus on Anti-Inflammatory Foods: Incorporate fresh vegetables, fruits (especially berries), and spices like ginger and turmeric, as well as omega-3 oils to combat inflammation.

By making informed choices about gluten, you can better support your health and well-being.
