Calling all coffee lovers. This decadent stack of Tiramisu Pancakes is for you. The pancakes are made using a combination of buckwheat flour and cashew meal to create a soft, spongey texture and we've layered with coconut yoghurt for added creaminess. To make nut free you can substitute cashew meal with sesame flour, and cashew butter for tahini or coconut butter.

PANCAKES

  • 1/3 cup buckwheat flour

  • 1/3 cup cashew meal (or sesame meal to make nut free)

  • 1/4 cup cacao powder

  • 1 tbsp mesquite powder (optional)

  • 1 tsp vanilla bean powder

  • 2 tsp baking powder

  • 1/4 tsp cinnamon

  • 1/4 tsp salt

  • 3 organic eggs (separated)

  • 1 ripe banana

  • 1/4 cup cold dripped coffee

  • 1/4 cup coconut milk

  • 1 tsp coconut oil (to cook)


COFFEE SAUCE

  • 3 tbsp cold dripped coffee

  • 2 tbsp smooth cashew butter (or coconut butter to make nut free)

  • 1 tbsp cacao powder

  • 1/2 tbsp coconut nectar

  • 1 tbsp boiling water (add according to desired consistency)

  1. Combine all dry pancake ingredients in a large mixing bowl, mix well.

  2. Combine egg yolks, banana, coffee and coconut milk in a blender, blend until smooth. Transfer to the dry mixture, mix well.

  3. Beat egg whites until firm peaks form and gently fold into the mixture.

  4. Place pancake mix in the fridge while you make the coffee-chocolate sauce. For the sauce, simply combine all ingredients in a small mixing bowl and mix until well combined.

  5. Place coconut oil in a non-stick pan and allow to melt over low-medium heat. Add a small amount of the pancake mixture and leave to cook for 1-2 minutes (or until bubbles start to form). Flip and allow the other side to cook for another minute or so.

  6. Repeat this process for the rest of the mixture and simultaneously, warm the sauce over the stove on low-heat.

  7. Spread coconut yoghurt between the pancakes (optional) and drizzle with sauce. Serve immediately.
