  • 3/4 cup almond meal

  • 2 tbsp protein powder

  • 3-4 tbsp coconut sugar

  • 1/2 tsp salt

  • 6 eggs, whisked

  • 3/4 cup oat milk

  • 1 tsp vanilla essence

  • Juice and zest of one large lemon

  • 1/2 tbsp butter (or coconut oil)

  • 1 1/2 cups frozen blueberries

  1. Preheat oven to 180 Degrees C.

  2. Combine all dry ingredients in a bowl, mix well.

  3. Create a well in the centre and add eggs, oat milk, vanilla and lemon zest.

  4. Place butter in an oven-proof skillet and allow to melt over low heat.

  5. Add blueberries and allow to sizzle briefly.

  6. Pour in the pancake butter and place skillet in the oven.

  7. Bake for 20-25 minutes or until just cooked through.

  8. Serve warm with fresh blueberries, coconut yoghurt and/or maple syrup.
