A perfect light and healthy lunch or summer night’s dinner. This is another simple recipe that requires fresh and high quality produce to maximise flavour and nutrient retention. We recommend buying organic from your local farmers’ market.

  • 100 grams fresh rocket leaves

  • 1 golden beetroot

  • 1 purple beetroot

  • 1 punnet cherry tomatoes (halved)

  • 1/2 avocado

  • 1/2 cup activated walnuts

  • 80 grams fresh goat's curd

  • 3-4 tbsp dry roasted pumpkin seeds (optional)

  • Handful fresh parsley (roughly chopped)

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 shallot (diced)

  • Salt and pepper (to taste)

  1. Preheat oven to 180 degrees C.

  2. Peel and chop beetroots and bake for 40-45 minutes.

  3. Remove from the oven and allow to cool.

  4. To prepare the dressing, combine all ingredients in a small dish and mix together.

  5. In a large mixing bowl, gently toss fresh rocket leaves, avocado, cherry tomatoes, walnuts, goat’s curd and beetroot.

  6. Mix the dressing through and transfer to plate.

  7. Top with fresh parsley and pumpkin seeds.
