How versatile is cauliflower?! Delicious as a pre dinner appetiser or as a side dish.

  • 1 large head cauliflower (cut into florets)

  • 1 tbsp gluten free flour

  • 1 tsp ground nigella seeds

  • 1 tsp turmeric

  • Salt and Pepper

  • 1-2 tbsp olive oil

  • 30 grams gluten free bread crumbs (alternatively can make from 1 slice day old GF bread)

SATAY SAUCE
  • 2 tbsp peanut butter

  • 2 tsp sesame oil

  • 2 tsp tamari

  • 1/3 cup oat milk

  1. Preheat oven to 190 degrees C.

  2. Steam cauliflower for 10 minutes until they are just slightly softened.

  3. Combine flour and ground spices in a small mixing bowl.

  4. Toss steamed cauliflower in flour mix.

  5. Dip floured cauliflower in olive oil and coat in breadcrumbs.

  6. Arrange on a lined baking tray and roast for 25-30 minutes, until golden and tender.

  7. Whilst the cauliflower is in the oven, prepare the satay dipping sauce.

  8. Combine peanut butter, sesame oil and tamari in a small mixing bowl, mix well before gradually adding oat milk (add until desired consistency is reached).

  9. Transfer cauliflower wings to a serving dish and serve with satay sauce.

  10. Top with fresh shallots and coriander, serve immediately.
