linguini (choose gluten free if required)
1 tbsp olive oil
1 red onion (chopped)
1 red capsicum (chopped)
400 grams tinned tomatoes
2 cloves garlic
1/4 tsp crushed nigella seeds
Salt and pepper (to taste)
1 cup basil leaves
30 grams goats cheese
2 tbsp olive oil
2 eggplants (cut lengthwise and brushed with 1 tbsp olive oil and grilled in double sided griddle)
2 zucchinis (cut lengthwise and brushed with 1 tbsp olive oil and grilled in double sided griddle)
1 bunch fresh parsley (stems removed)
30 grams parmesan cheese

Cook pasta according to manufacturer’s instructions.
Heat olive oil in a heavy based pan. Braise onions for approx. 5 minutes
Add capsicum and braise for a further 10 minutes.
Add tomatoes, garlic, salt and pepper. Continue to heat a further 10 minutes, stirring occasionally.
Meanwhile, grill sliced eggplants and zucchinis. We use a double sided griddle lined with baking paper.
Place in blender and blend on low speed until well combined.
Return to pan, add basil leaves and goats cheese, gently stir through.
Stir through cooked pasta.
Transfer to serving bowls and top with grilled vegetables.
Garnish with fresh parsley and parmesan cheese (optional).
