  • 1/2 cup organic self-raising flour (choose gluten free if required)

  • 1/4 cup arrowroot flour

  • 1-2 tbsp poppy seeds

  • 1/2 cup oat milk

  • 1/4 cup fresh lemon juice

  • 1-2 tsp lemon zest

  • 1 tbsp maple syrup

  • 1 tsp coconut oil (to cook)

  1. Combine dry ingredients in a mixing bowl, mix well.

  2. Add 'wet ingredients' and mix until combined.

  3. Place 1 tsp of coconut oil in a non-stick pan and allow to melt over low-medium heat.

  4. Add a small amount of pancake mixture and leave to cook for 1-2 minutes (or until bubbles start to form).

  5. Flip and allow the other side to cook for another minute or so. Repeat this process for the rest of the mixture.

  6. Stack pancakes and serve with maple syrup, coconut yoghurt and/or lemon juice.
