The ultimate healthy treat. You would never guess this chocolate soufflé skillet was gluten free, dairy free and refined sugar free. It is delicious served with dairy free coconut ice cream or vanilla bean nice cream.

1/2 cup cacao powder
2 tbsp almond meal (or sesame flour to make nut free)
1 tbsp tapioca flour
2 organic eggs (separated)
1 tsp vanilla bean powder
3 tbsp coconut nectar
1 cup macadamia milk (or coconut milk)
30-40 grams dark chocolate
1 tsp coconut oil (to grease)

Preheat oven to 180 C.
Place all dry ingredients in a mixing bowl and mix well.
Place egg yolks, vanilla and coconut nectar in a seperate mixing bowl and mix well.
Heat macadamia milk with dark chocolate, stirring continuously until chocolate has melted. Gradually add to egg mixture.
Whisk egg whites to firm peaks form and then gently fold into mixture.
Grease ovenproof skillet (20cm diameter) with coconut oil. Pour in chocolate mixture and bake for 12 minutes.
Remove and serve immediately with dairy free vanilla nice cream (or ice cream of choice) or coconut yogurt.
