The perfect loaf for when you're bored of banana bread. It is delicious served warm with a light drizzle of tahini and raw honey or keep it simple with organic butter.

  • 1 cup almond meal

  • 1/3 cup buckwheat flour

  • 2 tbsp mesquite powder

  • 1 tsp baking powder

  • 2 tbsp hulled tahini

  • 1/3 cup almond milk (or filtered water)

  • 1 tbsp raw honey (optional)

  • 3 tbsp flaxseed oil (or melted coconut oil)

  • 7-8 medjool dates (pitted) (roughly chopped)

  • 3 organic eggs

  • 1 cup walnuts (roughly chopped)

  1. Preheat oven to 180 degrees C.

  2. Combine all dry ingredients in a mixing bowl.

  3. Add whisked eggs, tahini, honey (if using), flaxseed oil (or coconut oil), roughly chopped dates and walnuts.

  4. Grease and line a loaf tin and scoop in the mixture.

  5. Place in the oven and bake for 30-35 minutes.

  6. Allow to cool for approx. 30 minutes before removing from the tin.

  7. Serve as is or with your choice of nut butter or tahini and honey.
