Strawberry and fig nicecream
3-4 frozen bananas
1 cup frozen strawberries
1 peeled fig
1/4 cup raw cashews (optional)
1 tbsp protein powder (optional)
- Combine all ingredients in a high-power blender, blend until smooth.
- Transfer to coconut bowls and add desired toppings.
If you’re a fan of the strawberry and fig combo, you will love of raw, vegan strawberry and fig cheesecake! It never ceases to amaze us how creamy and ‘cheesecake-like’ vegan cheesecakes are without having any dairy, and just how easy they are to make. The only time-consuming element is soaking the cashews (this helps to offset physic acid, as well as making it easier on your blender) and waiting for the cake to set. Aside from that, it is really no different to making a smoothie!
Something else we love about making raw cheesecakes is that ingredients can be adapted according to what you have on hand. For example, you can swap cashews for macadamias, coconut cream for non-dairy yoghurt, coconut nectar for maple syrup… you get the gist! Same goes for the base… You can use any kind of nuts and you can swap out the buckinis/coconut for more nuts if you don’t have these ingredients.
