Raw Chocolate Drops

Raw Chocolate DropsThese chocolate drops were inspired by the base from several of our raw cheesecakes, made using macadamias, dates, buckinis and coconut. It is such a great combination of flavours so we thought we would use the same recipe to make raw cookies, topped with choc-tahini sauce (recipe in basics). You could also substitute the choc-tahini sauce for raspberry-chia jam or raspberry coulis to make more traditional jam drops.


Makes 16

1 cup raw macadamias (soaked for at least 1 hour)
1 cup medjool dates, pitted*
1/2 cup buckininis
1/2 cup desiccated coconut
Pinch cinnamon
Pinch vanilla bean powder
1 tbsp almond milk
*Soak in warm warm water for a few minutes to soften
  1. Drain and rinse macadamias
  2. Place macadamias in a high power blender (we use a vitamix) and blend until ground
  3. And in all remaining ingredients and blend until smooth
  4. Remove the mixture and transfer to a bowl
  5. Place in the fridge for 15-20 minutes
  6. Form into cookies and top with our homemade chocolate sauce (recipe in basics)
  7. Return to fridge for an hour or so
  8. Serve and enjoy
