This classic Thai dish is packed with fresh vegetables and herbs along with characteristic peanuts and rice noodles.

This version of pad thai is vegetarian and can easily be made vegan by substituting honey with maple syrup and omitting the egg.

Serves 2.


1 tbsp peanut oil
4 shallots, chopped
1 small red chilli, finely chopped
1 red capsicum, sliced
1 zucchini, sliced
1 carrot, sliced
1 organic egg (optional)
1/4 cup coriander leaves
100 grams rice noodles
1/4 cup roasted peanuts
Beansprouts, coriander and lime to serve

Peanut sauce

1 1/2 tbsp peanut butter
1 tbsp raw honey (or maple syrup)
1 tbsp peanut oil
1 tbsp tamari


  1. Firstly prepare peanut sauce.
  2. Combine all ingredients in a small bowl, mix well and set aside.
  3. Then prepare rice noodles as per packet instruction.
  4. Sauté shallots in peanut oil for 2-3 minutes. Then add sliced vegetables, egg and lightly pan fry for for 4-5 minutes.
  5. Add noodles and coriander, gently stir and then mix through the dressing.
  6. Serve with additional coriander, roasted peanuts, beansprouts, chilli and/or lime.
