“Mars Bars”

Our healthy take on the classic ‘Mars Bar’ chocolates. Far better than the store-bought variety if you ask me!

They are gluten free, vegan and sweetened only with medjool dates and a touch of coconut sugar. For the chocolate coating, you can use your choice of dark chocolate however to keep it raw/vegan we recommend using a brand such as Loving Earth. This is by far our favourite vegan chocolate brand to cook with. Just be careful when melting as it burns quickly – we suggest using a double saucepan if you have one.

These Mars Bars are delicious on their own, or you can use it as a nice cream topping for a decadent breakfast or dessert.

Mars Bar Nice Cream

1/2 cup buckinis
1/2 cup cashews
1/2 cup desiccated coconut
2 tbsp coconut oil, melted
1 tbsp coconut sugar
3 tbsp boiling water
1/4 tsp Himalayan salt


1 cup medjool dates (soak in warm water for a few minutes to soften)
1/2 cup macadamias
1/2 cup cashews
2 tbsp coconut oil, melted
1 tsp vanilla bean paste
1 tbsp hulled tahini
1 tbsp maca powder, optional
1/4 tsp Himalayan salt
1/3 cup filtered water
1/4 tsp cinnamon


200 grams Dark Chocolate, melted (we use Loving Earth 85%)

  1. Combine all base ingredients in a high-power blender, blend until well combined. Press into a greased and lined square baking tray and set aside.
  2. Combine all caramel ingredients in a high power blender, blend until smooth. Scoop on top of the base, spreading evenly.
  3. Place in the freezer for 1-2 hours or until firm.
  4. Using a sharp knife, slice into  approx. 15 even pieces.
  5. Melt the chocolate using a double saucepan and then transfer to a shallow bowl. Allow the chocolate to cool slightly and then dip each individual caramel shortbread into the chocolate until fully covered.
  6. Place a sheet of baking paper on a plate to transfer the chocolate covered bars. Place in the fridge for 10-20 minutes to set, then serve and enjoy.
