This hot cross bun nice cream sandwich is the ultimate treat to enjoy over the Easter break. Hot cross buns are good on their own but the addition of spiced nice cream really takes it to the next level. For added decadence, we recommend a drizzle of chocolate sauce.
To simplify, you can purchase your choice of organic and/or gluten free hot cross buns from your local health food store. However if you’re feeling adventurous, you can even make your own! Try our healthified chocolate chip hot cross buns.

INGREDIENTS
- 6 hot cross buns
SPICED nice cream
- 4 frozen bananas
- 100 grams frozen coconut flesh (we use Amazonia)
- 1/2 vanilla pod, scraped (or 2 tsp vanilla bean powder)
- 1/4 tsp ground ginger
- 1/4 tsp cinnamon
- 2 medjool dates
Hot cross bun ‘swirl’
- 1 tbsp maple syrup
- 1/4 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 vanilla pod, scraped (or 1 tsp vanilla bean powder)
- 1/4 cup dried cranberries
METHOD
- Combine all spiced nice cream ingredients in a high-power blender, blend until smooth.
- In a small bowl, combine all ingredients for the hot cross bun swirl. Mix well.
- Spoon nice cream into a dish to freeze, gently mixing through the hot cross bun swirl.
- Place in the freezer for 1-2 hours.
- Scoop nice cream onto toasted organic hot cross buns.
