This easy vegan ramen recipe is nourishing, delicious and couldn’t be easier to make. It contains only 6 key ingredients and takes less than 20 minutes to make. Perfect weeknight dinner!

We buy an organic ramen noodle pack that provides both the ramen noodles and the ramen spice mix. Ensure you choose a brand that does not contain additives such as MSG and try to buy organic.

You can add additional vegetables to this easy vegan ramen according to preference and seasonal availability. You can also add another tablespoon of peanut butter if you would like a stronger peanut flavour.

Easy vegan ramen

  • 100 grams organic ramen noodles (purchase gluten free ramen if required)

  • 1 sachet organic ramen broth (ensure you choose a brand that does not contain additives such as MSG – most ramen noodle packs come with a ramen broth sachet to use)

  • 1 tbsp sesame oil

  • 1/2 bunch shallots, chopped

  • 150 grams button mushrooms, sliced

  • 1 tbsp Pic’s peanut butter

  • Fresh shallots and sprouts (to garnish)


  • Prepare 1 pack ramen and broth according to manufacturers instructions.
  • Sauté shallots and mushrooms in oil for approx. 5 minutes or until lightly golden.
  • Stir Pic’s smooth peanut butter through ramen noodles and top with sautéed mushrooms and shallots.
  • Garnish with fresh shallots and broccoli sprouts.

The Hi Oleic peanuts used in Pic’s Peanut Butter means that there is a higher ratio of mono-unsaturated fats. In fact, the fatty acid profile is similar to that of olive oil.  These mono unsaturated fats not only have well established health benefits, particularly for cholesterol metabolism and overall heart health, but also preserve the freshness of the peanut butter, extending shelf life.
