We buy an organic ramen noodle pack that provides both the ramen noodles and the ramen spice mix. Ensure you choose a brand that does not contain additives such as MSG and try to buy organic.
You can add additional vegetables to this easy vegan ramen according to preference and seasonal availability. You can also add another tablespoon of peanut butter if you would like a stronger peanut flavour.

Ingredients
100 grams organic ramen noodles (purchase gluten free ramen if required)
1 sachet organic ramen broth (ensure you choose a brand that does not contain additives such as MSG – most ramen noodle packs come with a ramen broth sachet to use)
1 tbsp sesame oil
1/2 bunch shallots, chopped
150 grams button mushrooms, sliced
1 tbsp Pic’s peanut butter
Fresh shallots and sprouts (to garnish)
Directions
- Prepare 1 pack ramen and broth according to manufacturers instructions.
- Sauté shallots and mushrooms in oil for approx. 5 minutes or until lightly golden.
- Stir Pic’s smooth peanut butter through ramen noodles and top with sautéed mushrooms and shallots.
- Garnish with fresh shallots and broccoli sprouts.
