Why we Love Pure Naturally Coconut Oil

For anyone who has our app or has looked at the recipes on our blog, you will notice that coconut oil is a staple ingredient of ours. However, coconut oils can vary greatly from brand to brand depending on the extent of processing they have undergone.

One of our favourite brands is Pure Naturally. Aside from the great taste of this product, we love the freshness of it (from coconut to bottle within 8 hours), as well as the fact it is 100% certified organic, cold-pressed and made completely heat-free. This heat-free process ensures that all nutrients are retained and also helps to maintain the oil’s natural, clear colour.

That said, coconut oil is one of the more heat stable oils so it is also a great choice for cooking. Higher temperature tolerance means that the oil is less susceptible to damage. The heating process can alter the chemical structure of fats, rendering them a ‘transfat’, the most dangerous type of fat we can consume as they are not recognised by the body.

If you’re one that is concerned about the fats in coconut, we have some good news to share with you… The type of fat in coconut oil is used primarily for energy production, rather than fat stores, meaning that these fats can actually assist with weight loss. Contrary to popular opinion that coconut oil is a saturated fat to be avoided, this oil can actually improve HDL/LDL cholesterol ratio, improve thyroid function and facilitates fat-soluble vitamin absorption… So there is no need to fear coconut when you’re choosing an organic, cold-pressed coconut oil such as Pure Naturally.

Clearly it is not just us that love Pure Naturally as this product won the Nature and Health’s Natural Food Award 2016 for the Cold Pressed Oil Category. No surprises there!

The Pure Naturally bottles are also made using the highest food grade BPA-free plastic, something we are very particular about and something that we believe should be avoided as much as possible.

As well as all of that, coconut oil is great to apply topically for the skin* (and for a hair/scalp treatment). We like to keep a jar in the bathroom as well as the kitchen!

While coconut oil is frequently featured in our recipes, we thought we would share the recipe for our delicious Matcha-Lime Coconut Pie here, of course made using Pure Naturally coconut oil. We are big believers that the quality of the coconut oil (and the quality of all ingredients for that matter) significantly impacts the overall taste.

Matcha-Lime Coconut Pie


1 cup almond meal
1/4 cup buckwheat flour
1/2 cup desiccated coconut
1/8 tsp Himalayan salt
2 tbsp hulled tahini
1 1/2 tbsp coconut nectar
2 tbsp coconut oil, melted
2 tbsp boiling water

Matcha lime filling

1 1/2 cups cashews
1/4 cup filtered water
1/4 cup lime juice
3 tbsp lime zest
1 1/2 tbsp coconut oil
1 tbsp lucuma powder, optional
3 tbsp coconut nectar
1/2 tsp matcha powder
1/4 tsp Himalayan salt

Coconut ‘cream’

350 grams plain coconut yoghurt (CoYo)
1 cup chickpea foam*

*Strain chickpeas, reserving liquid and transfer liquid to a mixing bowl. Using a hand-held beater, beat until soft peaks form.

  1. Preheat oven to 170 degrees C.
  2. Combine all dry base ingredients in a large mixing bowl, mix.
  3. Then add all remaining base ingredients and mix until well combined.
  4. Grease and line tart case (20cm diameter) and press the mixture into the base.
  5. Bake for 15 minutes and then set aside to cool.
  6. Drain and rinse soaked cashews.
  7. Place in a high-power blender and combine with all remaining matcha-lime filling ingredients, blend until smooth and creamy (this takes a few minutes).
  8. Spoon filling on top of the base and place in the freezer for 3-4 hours or until set | To make coconut ‘cream’ layer combine coconut yoghurt and chickpea ‘foam’ in a mixing bowl and gently fold | Spoon on top of the matcha-lime layer and place in the fridge until ready to consume.
  9. Dust with lime zest, serve and enjoy.

Serves 8-10.
